Celery Root Pilaf Recipe
1 celery root (look for this in your produce section, it looks like a gnarled root vegetable)
1 teaspoon olive oil, or flaxseed oil
½ lemon, juiced
½ avocado and/or tomato
dash or two onion powder or garlic powder
½ teaspoon fresh thyme, minced
Salt to taste with Celtic sea salt
1. Peel rough outer skin off celery root with kitchen knife.
2. Cut in to large chunks
3. Process celery root in food processor to fine couscous-sized bits.
4. Add oil, lemon juice, thyme, onion powder and salt and stir.
4. Add in avocado and/or tomato.
5. Stir and serve.
